The main differences (other than a slightly different body), are... SD750...3.0" LCD, no viewfinder. SD1000...2.5" LCD, has a viewfinder. My pick would be the SD1000, because it has the viewfinder (which is invaluable to have at times). Plus, it's in your price range ($200-250). Both have the same high res. LCD screen (230,000 pixels).
